I really wanted to call these lovely little bites by their real name at the restaurant, but was outvoted and they were relegated to becoming Bacon Wrapped Stuffed Jalapenos … so here they are in all their glory …. Atomic Buffalo Turds!
- 150g Cream Cheese
- 50g Grated Cheddar
- 20g Grated Parmesan
- 2 Sausages (of your choice)
- 8 Jalapeno Chilli’s (if you don’t want heat, use baby peppers)
- 16 Slices Smoked Streaky Bacon
Mix the cream cheese with the grated cheeses.
Halve the jalapenos length wise, try to keep the stalk on each half.
Using a teaspoon, scrape out the membrane and seeds.
Spoon (or pipe) a generous amount of the cream cheese filling into the halved jalapenos
Remove the skin from the sausage and cut each sausage into 8 pieces. Roll each piece into a miniature sausage shape and place on top of the cream cheese.
Stretch out the streaky bacon on a board with a knife and wrap it around the filled jalapeno, make sure you encase all the mixture or it will leak.
Cook directly on the rack in the smoker over indirect heat for 2-3 hours at 225F, until the bacon is cooked through and fairly crisp.
Serve straight from the BBQ (they won’t make it much further than that)!
